This recipe is a bariatric-friendly take on a classic treat. Each cookie is packed with protein from the peanut butter and protein powder, helping to support your body's healing and maintenance needs after surgery. The small amount of honey and dark chocolate chips add a touch of indulgence without going overboard on sweetness.
The cookies are soft and easy to chew, making them suitable for a post-bariatric surgery diet. They're also simple to prepare and bake, so you can have a batch ready in no time. Enjoy these cookies as a high-protein snack or a dessert that aligns with your dietary goals.
Remember, portion control is key in a bariatric diet. One cookie provides a satisfying serving, packed with flavor and nutrients but without excess calories or sugar.
1 cup reduced-fat peanut butter
1/8 cup honey
1 tsp vanilla extract
1/2 cup protein powder (choose a type that suits your dietary needs and flavor preferences)
1/2 tsp baking soda
1/4 cup dark chocolate chips
1/4 cup unsweetened almond milk
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the reduced-fat peanut butter, honey, and vanilla extract. Mix until well combined.
In a separate bowl, combine the protein powder and baking soda.
Gradually add the dry ingredients to the wet ingredients, mixing well. The mixture might be quite thick, depending on the type of protein powder used.
If the dough is too dry, add unsweetened almond milk, one tablespoon at a time, until the dough is a workable consistency.
Fold in the chocolate chips.
Form the dough into 12 balls and place them on the prepared baking sheet. Flatten each ball with the back of a spoon.
Bake for 8-10 minutes, or until the edges are slightly golden. Be careful not to overbake, as this can make the cookies dry.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Choose Your Protein Powder Wisely: The type of protein powder you use can greatly affect the taste and texture of your cookies. Whey protein tends to yield a softer, more cake-like texture, while plant-based proteins can make for a denser cookie. Choose a protein powder that suits your dietary needs and flavor preferences.
Adjust Sweetness If Needed: This recipe is designed to be lower in sugar, but if you find that you'd like your cookies a bit sweeter, you could add a bit of a zero-calorie sweetener like stevia or erythritol. Just be sure to add slowly and taste as you go, as these sweeteners can be much sweeter than sugar.
Monitor Your Baking Time: Protein baked goods can become dry if overbaked. Start checking your cookies a couple of minutes before the suggested baking time ends. They should be slightly golden and still a bit soft in the center.
Storage: These cookies can be stored in an airtight container at room temperature for up to a week. For longer storage, you can freeze them. Just wrap each cookie individually in plastic wrap and then store in a freezer bag or container. When you're ready to enjoy one, let it thaw at room temperature or give it a quick zap in the microwave.
Portion Control: After bariatric surgery, it's important to pay attention to portion sizes. Even though these cookies are high in protein and lower in sugar and fat, they should still be enjoyed in moderation as part of a balanced diet.
